Quinoa and butternut squash salad

Personally, I'm not a huge fan of salads and don't really like butternut squash.... However this salad is pretty darn delicious.
I tend to have it at lunch as it's got lots of great long lasting carbohydrates to give me energy for the rest of the day.
Portion size is dependent as it can be used it as a main or a side!
Ingredients: (Roughly 3 portions)
1 cup of quinoa (two cups of water)
1/2 a butternut squash
12 plum tomatoes
1/2 cucumber
1/2 onion
75 grams baby spinach
Lemon
Optional:
.Pumpkin seeds
Sunflower seeds
Grapes
All the above can be altered according to taste. Feel free to add or replace anything!
Method:
1. Cook the quinoa and butternut squash and leave to cool
2. Chop up all the veg into small pieces
3. Place all of the ingredients into a large bowl
4. Add a large squeeze of lemon juice and mix!
